I love eating healthy but I have no love for the kitchen! Over the past several years I have found some pretty simple but delicious recipes for making eating healthier more accessible for people like me who are allergic to elaborate recipes. This turkey muffins recipe is one of my favorites.
★ 1 Cup – quick cooking oats
★ 3 – egg whites
★ 1 tsp of mustard powder
★ 2 tsp of black and/or red pepper
★ .5 tsp of ground cumin
★ 2.5 lbs of lean ground turkey
>Combine all ingredients in a bowl and mix well.
>Use non-stick spray (or foil cupcake tins) on muffin tin (12 muffin holes)
> Stuff each of the 12 sections with the turkey mixture
> Bake at 375 for 40 minutes
